Unity Vibration is produced in Ypsilanti, Michigan and has made waves throughout the country with its probiotic beverage. In 2013, “Draft Magazine” named their Bourbon Peach Kombucha Beer as one of the top 25 beers in the country. Other unique flavors include raspberry, ginger, and cherry tisane.
The origins of Unity Vibration are in the home of owners Rachel and Tarek Kanaan. The husband-and-wife team began making kombucha tea in small batches for themselves and to share at family gatherings. The drink became so popular amongst friends that they began professional distribution of their kombucha tea out of their home. Eventually, due to the production process they were faced with a decision: obtain a brewer’s license or compromise the integrity of their product with pasteurization.
The kombucha production process begins with fermenting tea, sugar and/or fruit, and a symbiotic culture of bacteria and yeast, also known as a SCOBY. As a result, there is a slight trace of alcohol in any batch of authentic kombucha tea, and therefore subject to state regulations. Pasteurizing the tea eliminates the traces of alcohol from the beverage, but also strips much of the natural and beneficial bacteria from the drink. After much consideration, Rachel and Tarek obtained a brewer’s license and continued producing quality products rich in probiotic health benefits.
Equipped with a brewer’s license, Rachel and Tarek developed the kombucha beer next, adding hops to the tea’s fermentation process. The beer is concocted in bourbon barrels by hand, in small batches. The result is effervescent, sour, and full of health benefits. Many will tell you kombucha beer is an acquired taste with its sour, tart, and vinegar-like qualities.
